- 3 cups of risotto ( up to 4)
- Four eggs
- 2 cups flour
- 2 cups breadcrumbs
- 2 ounces mozzarella (or cheese of your choice)
- 2 cups vegetable oil
- 3/4 tsp kosher salt

- 1 1/2 cup leftover rice
- 1 tbsp oil
- 1/2 tsp cinnamon

Combine everything but the oil in one bowl. Make sure it’s evenly mixed.
Get a large non-stick skillet and pour 1/2 tablespoon of cooking oil inside. To make the pancakes similar in size, get a 1/4 cup measuring cup. Then, fill it with leftover rice, and put it onto the hot skillet.
