What Is Steak Tartare?

Steak tartare is raw beef or horse meat dish. The meat has to be of good quality and served minced. The bold taste of the raw steak is amplified with additions like capers, onions, Worcestershire sauce, pickles, various herbs, and seasonings. And in many cases, this dish is served with a raw egg yolk.

Now you don’t need to ask what is steak tartare anymore, but there’s probably one more that you’d like to get answered.

Can You Eat Raw Meat?

The first question that comes to the mind of many that never tasted a dish like this is if it is safe to eat raw meat. And yes, it is entirely safe to eat if the meat is fresh, prepared properly, and handled safely. However, some people should avoid eating raw meat and eggs like pregnant women, the elderly, infants, and those with a compromised immune system.

To avoid any problems and the risk of foodborne illness, you should always choose respected restaurants if you want to go out to eat steak tartare. And be sure to do these things if you plan on making beef tartare at home:

  • Choose high-quality beef and ask your butcher which is the best meat for steak tartare.
  • Don’t buy the meat in advance; it would be best if you buy it the day you plan on making the dish.
  • Be sure that the meat is super fresh. Until you start preparing the dish, keep the meat refrigerated.
  • Please use gloves when working with raw meat.

Our Beef Tartare Ingredients

For the best experience, you’ll want to have the best ingredients. Fresh meat and high-quality ingredients are the keys to a perfect dish. There are a few classical ingredients for steak tartare that you don’t want to miss and a few that you can play with, like the seasonings.

And here are the ingredients you’ll need for our steak tartare recipe:

  • Fresh and lean steak – It’s essential that the steak you buy is fresh and doesn’t have fatty parts, or at least a lot of them. Always ask for the freshest meat and let your butcher know what you need the meat for. The best choice is sirloin and beef tenderloin.
  • Capers – The vital ingredient of a tartare recipe are the capers. They will give a good note of acidity to the dish.
  • Shallots – Onions are also a staple in a steak tartare, and we think that shallots are perfect for this recipe.
  • Worcestershire sauce – Another essential ingredient in every recipe is the Worcestershire sauce. It takes the whole dish to another level, and we can’t imagine beef tartare without it.
  • Dijon mustard – The tasty glue that will stick everything together is some good old mustard.
  • Fresh parsley – You can play around with herbs you want to add, but we like keeping it simple with fresh parsley.
  • Egg yolk – The classic way of serving it is with an egg yolk on top of it, and you don’t want to skip it.

What to Serve With Steak Tartare

The beauty of this dish is also in its presentation and the ingredients you serve with it. The traditional way is to serve a freshly baked and toasted baguette. You’ll want to add cornichons or any other pickled vegetables as a side; just be sure that they are more on the acidic side and not sweet. Lemon wedges are also highly recommended, and a scoop of Dijon mustard.

The main star of the dish is the beef tartare, and that’s why you should keep all of the other sides simple. You want to taste the specific flavors of the meat, and the sides should compiment them and not overpower them.

Steak Tartare Recipe: How to Make It

The recipe for this incredible dish is relatively simple; you just need to prepare it with care if you want to have a high-quality dish in the end. The process of making it is exciting, it can be a little intimidating if you have never worked with raw meat, but once you make it the first time, every other time will be like a walk in the park.

Steak Tartare Recipe: Tips and Tricks

Here are a few tips and tricks to help you prepare the best tartare steak at home.

  • Trim off the fat – It’s essential to buy the steak as lean as you can, but if it has a bit of fat on it, you’ll want to trim it.
  • Chop the steak finely – You’ll need a sharp knife when chopping the steak because you want to chop it into tiny cubes. A good trick is to freeze your steak for about 20 minutes and then chop it. The firm steak will be much easier to chop, and you won’t have to struggle with it. If you don’t want to chop and think it’s time-consuming, you can always grind your meat in a meat grinder.
  • Store the meat in the fridge – Once you chop the meat and prepare other ingredients, store the meat in the fridge.
  • Prepare the mixture in advance – If you have guests coming and want to prepare it in advance, you can do it and store it in the fridge. However, you can’t store it for more than 2 hours because the meat will start to turn grey.
  • Never store the leftovers – It is more of a warning than a tip, but you should always finish this dish in one sitting because it’s not possible to store it for later.
